Spring Dinner With Friends

Saturday evening brought together several friends for a delightful spring influenced dinner.  It is the height of Copper River Salmon season and so that was the reason for the dinner.  But then, when it comes to good friends, do you really need an excuse to get together for dinner?
Yes, Gumby and Pokey were part of the festivities.  Jodie made some sangria and it was mighty delicious.  Went great with the salmon.  To say the least, we did not want for more food.  The dinner was such a success, I am doing it all over again tonight as Jeff is coming to dinner.
The dinner was focused on the Copper River salmon, but I have to say that the side dishes were the stars.  I made a Roma tomato & English cucumber salad that was just about completely consumed.  About 5 deviled eggs survived!  Helene brought a lovely bottle of Spanish wine which we never got to.
What a cute picture and I actually was able to get it caught on camera!  Rob and Jodie are dear friends.  They arrived early and we played a couple of games of Catan before the others arrived.  One of our favorite board games.  BTW, Rob took most of the pictures, other than this one!
No, I had not forgotten the final salad.  It is an asparagus and strawberry salad that usually has a blue cheese vinaigrette.  But, last night I knew both Jodie and Helene do not like blue cheese so I left the dressing off and provided 2 options at the table.  Simple salad.  Steam asparagus and then chill in fridge.  Add cut strawberries and top with dressing.  Can you say too easy?  Indeed, an evening of good company.  Even Markie seemed to have a good time last night.
